Ice Cream - Continuous Freezers
Used to freeze and add air (overrun) to the ice cream mix on a continuous flow basis. Ice cream mix is pumped into the freezer at around 4°C. It is travels through a barrel where it is whipped and frozen to a temperature of approximately -7°C. A continuous freezer will normally add a higher % overrun than a batch freezer often giving between 60 - 140%. Flow rates usually range from 150 - 3000 Litres per hour. Common makes of continuous freezer are APV, Technogel, Soren, Hoyer, WCB, Gelmark, Tetra Pak, Gram, Techno Ice, Crepaco, Catta 27. |
