The unit has a gross capacity of 650 litres and working volume of 500 litres and is equipped with a bottom-mounted High Shear Turbo Mixer featuring a disintegration high shear head, along with a top-mounted scraped surface mixer for effective mixing, emulsifying, and continuous product scraping during heating or cooling cycles. The vessel is jacketed for thermal regulation and is vacuum capable, supplied with an integrated vacuum pump to allow processing under vacuum conditions for cooking, concentration, or de-aeration to enhancing product texture, consistency, quality & shelf life.
