Description

This is a pre-owned mozzarella cheese ball production plant, manufactured in Italy by COMAT and PFM in 2008, offering a complete solution from curd to packed product. The line combines a continuous cooker stretcher (COMAT M42B) for precise texture and moisture control, a flexible moulder (COMAT M50B4) for consistent ball forming, and both pre-hardening (COMAT MPR8) and final hardening tunnels (COMAT MR8) to ensure perfect structure and cooling. An automated transfer conveyor seamlessly feeds product into a high-speed vertical pouch packaging machine (PFM Zenith Servo EW), delivering efficient, continuous output. Built from food-grade stainless steel and designed to European standards, this plant delivers reliable performance, high capacity, and consistent quality in mozzarella ball production.

Step #1: Cooking and Stretching with the COMAT M42B Continuous Cooker Stretcher

The stretching machine is designed for pasta filata cheese production with varying moisture levels, suitable for products such as mozzarella, cascaval, kasar, kasseri, and string or pizza cheese.

Its dual-arm stretching and mixing system allows precise control over texture, moisture, and fibre structure. Combined with an integrated water system, it enables operators to easily adjust settings and produce different cheese types with high flexibility.

The machine features five main sections: feeding, cooking (heating and curd hydration), double stretching, water heating, and control unit. It can be easily integrated into new or existing production lines thanks to its compact and practical design.

Built in AISI 304 stainless steel, all product-contact parts are made from food-grade materials or coated with PTFE, ensuring full compliance with European regulations.

Step #2: Moulding with the COMAT M50B4 Moulder

This moulding machine is designed for the production of high-moisture, spherical cheeses. It can be fed directly from a stretching machine or any upstream process.

The system includes a feeding section and a main body equipped with four stainless steel augers coated in food-grade PTFE. Auger speed is easily adjustable via handwheel and powered by two 0.75 kW motors. The moulding section features a rotating drum (MOD B04TR) designed for forming 100 g cheese balls (5 other moulds also available with the machine). Drum speed is adjustable and driven by a dedicated 0.22 kW motor.

To maintain optimal product temperature, the machine includes a heated water system with a 1000 W heating element and temperature control.

Constructed entirely from AISI 304 stainless steel, all product-contact parts are made from food-grade materials or coated with PTFE, ensuring full compliance with food safety regulations.

Step #3: Pre-harderning with the COMAT MPR8 Hardening Tunnel 

This hardening line Mod. MR is a machine for the continuous hardening of mozzarella cheese and similar products of any size. This type of machine collects and cools product coming from moulding machine, before packaging.
A product feed tray, made up of easily demountable stainless steel modular components.
Motion system of feed tray working pneumatically. The motion parts are external to the basin, and the
sending back takes place by the means of a fork couple, joined by an axel, and of which the external one is linked to motion parts and the internal one is linked to the mobile shelvels.
Hydraulic system for the hardening water circulation in closed circuit.
The movement of the product inside the vat is done by means of a series of oscillating belts entirely built in stainless steel AISI304L operating by pneumatic system. At the end product is automatically extracted by means of a special motorized belt made of alimentary plastic. The speed of vats is modifiable by operator through time setting on the general control panel.

Step #4: Final hardening with the COMAT MP8 Hardening Tunnel 

This hardening line Mod. MR is a machine for the continuous hardening of mozzarella cheese and similar products of any size.
This type of machine collects and cools product coming from pre hardening bath, before packaging.

Step #5: Mozzarella Ball Transfer from Hardening Tunnel to Packaging with the Comat Loader

Suitable to transport automatically mozzarella cheese balls from bath line to packaging machine. Made in stainless steel and alimentary plastic belt. Belt is complete of conveyor system in order to feed continuously packaging machine with pieces of mozzarella having a weight of 100 gr. The automatic Batch-Conveyor has the aim to receive inside its vat the mozzarella cheeses coming out
from the hardening line and to transport them automatically to the packaging machine. The accumulation vat conveys the mozzarella cheeses into the cups or vanes placed on the lifting belt. This belt is equipped with a surveying system which assures the continuous product feeding to the packaging machine, thus
decreasing at minimum packing times and increasing consequently, the yield of the system. All conveyor is completely built in AISI 304 stainless steel.

Step #6: Final packaging with the PFM Zenith Pouch Filler

The packaging machine type ZENITH is fit for the packaging of alimentary products, as e.g.: granular,
loose or powdered products, fresh cheese (Mozzarella), etc. This machine is a vertical form fill and seal packaging machine produces closed packets with three seals from a roll of heat-sealable material. The Zenith can carry out various type of packaging. The Zenith‘s setup can be changed exceptionally quickly and so it is perfect when a large range of products need to be packaged. The packaging speed may vary according to the type of packaging material as well as to the product‘s length anyhow, the Zenith can reach an output of 80 packs per minute.
